Best banana bread

This is, in my opinion, the best banana bread out there. I love banana bread and have messed around for a few years with finding the best recipe. Having tried many different combinations of ingredients, I landed on my own recipe which combines the best of all worlds. Even better, it has no refined sugar!

Ingredients

4 very ripe bananas
1/2 cup Greek yogurt
1/4 cup coconut oil or butter
1/4 cup honey or maple syrup
1/4 cup tahini
2 eggs
2 tsp vanilla extract
3/4 cup spelt flour
3/4 cup rye flour
1/4 cup oats
1 1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp sea salt
1 cup 85% dark chocolate

Method

Preheat the oven to 350 degF / 175 degC and rub some butter or coconut oil into a large loaf tin.

Mix the wet ingredients with a blender or fork. Mix the dry ingredients in a big bowl and then add the wet ingredients and mix well to combine. Chop up the dark chocolate and fold into the mix.

Cook for 50-60 minutes until a skewer comes out clean-ish (it is a moist loaf so you still want some sogginess in there!), covering the top if it starts to catch.

Leave to cool in the tray before cooling some more on a chopping board.

Enjoy with some Greek yogurt on the side or just by itself!

In action

This is an incredibly tasty loaf of banana bread that probably tops the list in terms of snacks to keep me going through training. It uses no white flour nor refined sugar and I often swap out the chocolate for some blueberries and/or chopped walnuts for a change. I recommend trying out the walnuts if you are looking for a surprise.
